Farmers’ markets filled with sustainable, organic wares are a mainstay of the Byron Bay region. There’s no place for a suit and tie at either the tiny Fleet in Brunswick Heads or Town in Bangalow, just a 20-minute drive from Byron. At Fleet, Astrid McCormack and Josh Lewis offer a tightly curated wine list – 18 wines to taste by the glass – and a menu that is both a showcase for what was bought at the farmers’ market that morning and Lewis’s prodigious talent.
