In 2009 Rick Stein at Bannisters in Mollymook on the on the NSW South Coast opened and Rick and his wife Sarah bought a ‘60s beach house just down the road. Transforming the retro beach house into a boutique hotel, Rick's Place offers five bedrooms and five bathrooms and sits on a cliff top looking out to the sea on one side and a bush reserve on another. The house still retains hallmarks of its day, including wide P&O style decks, stained timber panelling and inside, retro style bathrooms but the kitchen has all the mod-cons including two dishwashers. Designed to allow guests to spend long lazy days reading, walking along the beach and enjoying good food, Rick’s Place is the perfect coastal escape.

Armando Percuoco’s Valleyfield Escape, Hunter Valley

When Buon Ricordo is closed, Armando can be found at his Hunter Valley farm, Valleyfield, tending to his garden.  Along with the extensive olive groves that supply the restaurant with oil, there are vegetables, herbs, figs, persimmons, quince, loquat and Seville oranges. Valleyfield has a boutique guesthouse for two available for booking all year round. Set in bush surroundings with 2.5 acres of lush gardens, the guest house, designed by PikeWithers, consists of a lofty open-plan dining/lounge room with a cosy log fire and a small selection of books and board games. The villa sleeps two adults in a king size bed, the bathroom has a heated floor and a ‘large-enough-for-two’ rainwater shower. There’s even a ‘spoon’ bath in front of a 2.5 metre (8 foot) high window overlooking the olive grove. Of course, there is a fully equipped chef’s kitchen – but you can choose to prepare your own meals or select meals from Buon Ricordo, ordered before your arrival. Guests are encouraged to pick from the wide variety of edible plants and herbs, as well as the dozens of varieties of fruit and vegetables, growing near the guest villa – and while out in garden keep an eye out for the family of kangaroos that visit daily at dawn and dusk.

Valleyfield Escape is located just outside the small village of Wollombi and surrounded by the Watagan ranges in the Hunter Valley region. Other attractions include Noyce Brothers Wines, The Wollombi Wool Store and Slattery Helicopter Charter.

Located a 90-minute drive south-west of Melbourne, the Brae guest suites are set on the 30 productive acres that house the award-winning restaurant Brae. Under the creative direction of chef Dan Hunter, the restaurant sits within an architecturally converted farmhouse on the same property as the six luxury guest suites, making it an easy commute for those who are dining and sleeping on the property. The villas, designed by Six Degrees Architects, are understated in luxury - from the heated slate floors, and bath with dual aspect views to the stargazing window above the bed. As a little bonus, you’ll also find an in-room small-batch wine and spirit collection plus snacks from Brae’s kitchen. Staying on the property allows you a little extra time to appreciate your surroundings - the acreage, which is just inland from the surf coast town of Lorne, includes established vegetable patches, an olive grove, an organic orchard and beehives. All this after your in-room house-made breakfast of organic, wood-fired sourdough bread, pastries and seasonal produce, of course.

Brae is located along Victoria’s Great Ocean Road, making it the perfect overnight pit-stop if you’re road-tripping from Melbourne to the 12 Apostles
