DAY 1: MARKETS, MONA AND HOBART

Morning
Arrive this morning in Hobart and make your way to Salamanca Place to gather Autumn produce at Salamanca Market – one of Australia’s best outdoor markets. Meet producers, sample produce, and soak up the vibrant community atmosphere of over 300 stalls flanked by towering Georgian sandstone warehouses and English trees.

Afternoon
Your afternoon is free to explore Mona, Australia's largest private museum. Its collection includes ancient Egyptian mummies and the world's most thought-provoking art. Have lunch at The Source Restaurant, sip cocktails at Void Bar or visit Moorilla or Moo Brew’s cellar door for tastings or tours. Catch the ferry back to Hobart.

Evening
This evening dine at Franklin restaurant located in an old Ford showroom (c. 1923). The kitchen in the centre of the restaurant means the team prepares their fine fare before your very eyes. The changing menu focuses on locally sourced produce – some of which the chefs forage for themselves. Next stop Saffire Freycinet!

DAY 2: SPA PAMPERING AND FIVE STAR TREATMENT

This morning be driven by your chauffeur along the spectacular Great Eastern Drive to Saffire Freycinet– one of the best luxury hotels across the globe. Visit Spa Saffire to be renewed and restored from tip-to-toe – ready for East Coast seafood and wine adventures.

Afternoon
This afternoon head out on an exclusive Saffire Experience. They have a range of activities for every mood and every moment. Maybe a sparkling cruise, a cooking demonstration of one of Palate’s dishes, a cocktail Mixology Masterclass, or a wine and vine adventure – with tastings of course.

Evening
This evening dine at Saffire Freycinet’s exclusive restaurant, Palate. Multi-course degustation menus matched with outstanding local wines are designed around what is available fresh from the ocean or paddock that day.

DAY 3: WINE, OYSTERS AND THE FREYCINET

Freycinet Marine Farm, Coles Bay, Tasmania.

Morning
This morning wake to a view that’s impossible to describe and impossible to escape. Don a pair of waders and visit a working oyster farm located in internationally significant wetland. Before you know it you’ll be standing knee deep in an estuary enjoying freshly shucked oysters and local sparkling.

Afternoon
This afternoon you are free to explore the Freycinet National Park. Walk to Wineglass Bay, hop on a quad bike to secret Freycinet beaches or drop into cellar doors and Freycinet Marine Farm. Finish off with a scenic flight over the national park or twilight paddle under the impressive Hazards Mountain range.

Evening
This evening ask Palate to tailor your dining experience. The chef welcomes input for masterful interpretations of your favourite dish made from local ingredients, enhancing the genuine flavours of home-grown produce. Panoramic views of the Hazards Mountain ranges are always on the menu.

DAY 4: THE GREAT EASTERN DRIVE

Great Eastern Drive, Orford, Tasmania.

This morning depart Coles Bay and farewell Saffire Freycinet as you are chauffeured along the Great Eastern Drive once more. The drive promises a winding coastal sojourn along a blindingly beautiful coastline, ridiculous beaches, and a gentle coastal breeze all the way to Hobart Airport for your departure.
