Itinerary details

Day 1: U.S. to Sydney

After a comfortable flight to Sydney, Australia, board your private transfer to the InterContinental Sydney. Settle into your Club InterContinental city side room where you will stay for four nights. The epitome of modern elegance set in the restored Treasury Building of 1851, definitive luxury comes to life from the moment you arrive. Enjoy exclusive access to the Executive Club Lounge on the 31st floor featuring a breathtaking wrap-around balcony terrace, complimentary buffet breakfast, twilight cocktails and appetizers, and refreshments throughout the day, plus personalized concierge, business services, and private check-in and check-out.

This evening, dine on imaginative Pacific-rim cuisine from land and sea, infused with distinctive Asian influences, in acclaimed 117 Dining restaurant. Start with Ora King Salmon sashimi or Robata grilled nectarine salad, with an entre of grilled Wagyu Striploin au jus, followed by an aptly named dessert of "Don't Worry," made of dark chocolate on caramel macadamia ice cream with vanilla ganache and milk foam for a sweet ending to your very first day.

Days 2 to 3: Sydney

Explore the great halls of the iconic Sydney Opera House this morning on the Tour & Tasting Plate Excursion. Learn the secrets and stories of this great architectural wonder, its artists and performances as you step inside, capturing photographs from poignant locations. Then, savor chef and artisan-prepared offerings as you delight in a three-tier tasting plate while soaking in Sydney Harbour views. Upon return to the hotel, ignite your senses with high-tea at The Cortile. Immerse in the soaring atrium as you sip a cup of tea or perhaps a glass of French Champagne, accompanied by tea sandwiches, traditional Quiche Lorraine or buttermilk vanilla scones for a mid-day treat.

For a decadent seafood dinner experience, dive into Cafe Opera's fresh market-style buffet, complete with Balmain bugs, Sydney rock oysters, crabs, octopus, sashimi and whole baked Atlantic salmon, plus an array of salads and vegetable side dishes. Be sure to save room to indulge your sweet tooth from the ever-abundant dessert library, filled with specially prepared tarts, cakes, mousses and sorbets.

Day 4: Sydney - Hunter Valley

Balloon Aloft, Hunter Valley, New South Wales

Rise and shine early as you depart for an exciting day on the tastings in Hunter Valley, A Wine Lover's Adventure. Sip a cup of tea or coffee before you meet native wildlife up close and personal at the Australia Reptile Park, including kangaroos, wallabies and pademelons, plus a variety of snakes, lizards and crocodiles.

Afterward, head to Hunter Valley, Australia's oldest wine region and home of acclaimed wineries and vineyards, for private tastings and gourmet samplings prepared from regional produce, and a delicious lunch. The indulgence continues with a visit to charming Hunter Village, exploring boutiques, gourmet delights, more cellar doors and an exceptional chocolate shop for a perfect taste of Australia.

For a cut above the rest, celebrate your last night in Sydney at Meat & Wine Co. Serving cutting-edge modern cuisine amid contemporary interiors and discerning African influences, dine on locally-sourced, grass-fed Monte Beef, exclusive to the restaurant, for a steak experience second to none.

Day 5: Sydney - Melbourne

Depart the hotel for your short flight to Melbourne. Upon arrival, board your private transfer to the Grand Hyatt Melbourne where you will stay four nights in King Grand Club guestroom. Delight in Melbourne Yarra River views, Italian marble baths and Egyptian linens, together with exclusive Grand Club benefits featuring personalized check-in and check-out, daily continental breakfast, all-day refreshments and evening canapes and cocktails.

Exuding urban sophistication, raise a glass to your first night in Melbourne at Ru-Co, boasting signature cocktails, an impressive list of single malt whiskeys and cognacs, and a 2,700-premium bottle wine room. Then, indulge in International flavors at Collins Kitchen. From freshly shucked oysters and barbeque octopus small plates to Kung Pao chicken, rack of lamb or steak of the day, there's something for every palette.

Day 6: Melbourne - Mornington Peninsula

Only an hour from Melbourne, escape to the country on the Mornington Peninsula & National Park Excursion. Travel to the tip of the peninsula, exploring famous bathing boxes, and to Point Nepean National Park, appreciating its military history, stunning coastal scenery and views of Bass Strait. Savor lunch at a local winery before visiting a strawberry farm, enchanted maze gardens, local chocolate shop and Murray's Lookout for captivating vistas.

For a private dining experience this evening, take a seat at the chef's table in Collins Kitchen for a theatrical cooking show from the chefs for a grand finale to your fun-filled day on the peninsula.

Day 7: Melbourne

Exterior of MoVida Next Door, Hosier Lane, Melbourne, Victoria

Explore the city or spend your days relaxing at the hotel. Experience high-tea in style in Collins Kitchen with an array of signature teas on elegant vintage porcelain, served with warm scones and jam, gracious finger sandwiches, decadent desserts and more. Or wander the stylish, vibrant city of Melbourne with its maze of hidden laneways, opulent bars, exclusive restaurants and off-the-beaten-track boutiques and shops. Visit Southbank's cafes, bistros and bars and taste a world of cuisines in Carlton, Richmond and Fitzroy. For a little taste of history and science, take an Aboriginal Heritage Walk through the Royal Botanic Gardens, with its beautiful landscapes and subtropical plants.

Day 8: Melbourne  - Yarra Valley

For a true gastronome or wine enthusiast, spend the day experiencing the world's greatest food and wine regions on the Yarra Valley Food & Wine Excursion.
