Australian chefs are having a lot of fun with what they can put between two pieces of bread.

An Aussie burger revolution has taken place in the past few years, with a new generation of restaurateurs taking the humble burger to new heights. These new burgers come packed with premium produce, are piled high with guilty pleasures or given a twist for vegetarians. Here are 12 of Australia's best burgers.


Huxtaburger, Collingwood, Victoria

Melbourne's very own burger king, Daniel Wilson, has been at the forefront of Australia's newfound love of the hamburger since opening Huxtaburger n the inner city suburb of Collingwood in 2011. Brioche buns, Wagyu beef and house-pickled cucumbers form the simple and successful recipe. You can spice it up by ordering the Denise, which adds jalapenos and sriracha mayo to the mix.

Easey's, Collingwood, Victoria

Is eating fast food in a train carriage perched on top of an inner city Melbourne rooftop a bit gimmicky? Sure. But are the burgers at Easey’s worth it? You bet they are. The Rowdy Double Cheeseburger – with an indulgent, buttery bun and loads of melting cheese – with a side of chilli cheese chips is the pick of the bunch. These guys are serious about burgers - so serious they have released a book, The Burger Book.

8Bit, Melbourne, Victoria

Self-proclaimed “Melbourne’s finest”, with a retro arcade game themed shopfront, 8Bit has the burgers to back up the claim. Burgers come wrapped in paper and sitting in a cardboard holder ready for chomping. The buttery brioche bun is perfectly toasted. Try the Altered Beast with beef, bacon, cheese, grilled onions and both BBQ and special 8Bit sauce.

Mary's, Newtown, New South Wales

This bar is a favourite in the Sydney suburb of Newtown, thanks largely to the burgers. Mary's is a rustic space with glass bottle lights, wall murals and recycled wood. The chalkboard menu has a wide range of craft beers. Try the Mushroom Burger, in which a huge field mushroom fills in for the beef. It's one of the city's best vegie options.

Burger Project, Australia wide

You expect fine produce to be at the heart of celebrity chef Neil Perry's excursion into dude food, and Burger Project delivers. Grass-fed Cape Grim beef (thought to be the best in Australia), premium Lilydale free-range chicken and house-made pickles and sauces are served in a light and bright fast food-style space. Try the Fried Chicken and Bacon Katsu, for a twist on a bird burger.

Burger Theory, Adelaide and Melbourne

Burger Theory started as a popular food truck on the streets of Adelaide and now has permanent digs in the city. It has also expanded to Melbourne. The Burger Theory teams make all patties on site and have a great range of non-beef options, such as Korean chicken burgers and falafel burgers. Try the Pearl’s Cheeseburger with cheese, pickles, onion, ketchup and mustard.

Short Order Burger Co., Fremantle, Western Australia

Located in a shipping container at The Mantle, a creative co-op in Fremantle just south of Perth, the Short Order Burger Co. keeps things simple with a handful of burger options, plus fries and sauce, made to order. Try the BBQ Bacon Cheeseburger, which uses maple bacon and piles it high.

Ben's Burgers, Fortitude Valley, Queensland

Feeding the revellers who flock to Brisbane's Fortitude Valley, Ben's Burgers takes an experimental mix-and-match approach, in which you can grab a basic burger and add extras such as candied bacon or jalapenos to spice things up. The venue is a plain white and wood affair, where the breakfast burgers are a particular favourite. Try the Elvis, with bacon, peanut butter, banana and maple syrup, at least once in your life.

Getta Burger, Brisbane, Queensland

Easy to spot, with its bright yellow and black colour scheme, Brisbane's Getta Burger is a rapidly expanding burger group that is an Instagram favourite due to its overflowing creations. Try the Getta Filthy, with beef patty, double cheese, fries, brisket, bacon, pulled pork, grilled onion, fresh white onion, pickles, ranch, mustard and BBQ sauce all squeezed between two pieces of bread.

Burger Haus, Hobart, Tasmania

These are gourmet burgers in a Hobart retro café-style joint with a huge list of options. Burger Haus specialty burgers include the Wild Boar, with slow-cooked boar and house slaw, and the Schnitzel Burger, with a crisp schnitzel served on pide bread. Try the Greek Goddess, a prime lamb patty with feta, tzatziki, hummus, tomato, lettuce, red onion and flat leaf parsley - or an ice cream burger (pictured) if you dare.

Brodburger, Kingston, Australian Capital Territory

Canberra's Brodburger started as a food van feeding the capital’s late night revellers, but has moved to the Canberra Glassworks project in the suburb of Kingston. It’s a modern diner with a large outdoor space for wolfing down your burger. Try the original Brodburger, packed with a beef patty, lettuce, tomato, onion, homemade aioli, tomato relish and blue cheese.

Chur Burger, Australia wide

The street art daubed walls of Chur Burger churn out some of the most creative and towering burgers in Australia. Started in Sydney, and exported to Brisbane and Melbourne, Chur is also known for beef brisket tacos and fried chicken, but the burgers are the stars. Try the signature burger with crisp pork belly, chilli caramel, slaw and aioli.
