Go heli-foraging

There’s learning to craft gin, then there’s flying over the Top End to forage the ingredients yourself. For Darwin Distilling Co, ‘the farm’ is the Top End itself, where native botanicals grow between paperbark forests and wildlife-abundant floodplains. Harvest botanicals while taking in the Top End’s wildlife, wide-open floodplains and station life at Finniss River Lodge on a heli-foraging adventure. With your harvest collected, the gin-making begins.

Stay on a cattle station

From barramundi fishing to cattle mustering, some might say life on a working Australian cattle station isn’t your average holiday – and they’d be right. Bullo River Station, a Luxury Lodge located near the Northern Territory and Western Australian border, invites you to live and breathe station life from one of its twelve luxury guest rooms. Everything at Bullo celebrates the land, from the retreat’s architecture to its farm-to-table menu, using herbs, vegetables, eggs and beef sourced from the station.

Darwin is the tropical capital of Australia, home to native bush foods – think Kakadu Plum and red bush apples – and Asian-influenced flavours that shape the Top End’s distinctive food offering. Get a taste of the city on a walking gourmet tour. Throughout the day, you’ll be served exotic dishes including marinated crocodile, kangaroo spring rolls and green papaya salad, across a hand-picked selection of Darwin’s top restaurants.

Parade the Parap Market

Speak to any Darwin local, and they’ll send you to the Parap Village Market – more specifically, the laksa stand (all eight of them). A weekly ritual among locals, the market (held every Saturday from 8 am to 2 pm) is brimming with authentic Asian street food, from Vietnamese and Malaysian to Thai, alongside colourful rows of tropical Top End fruits. Say hello to the chefs, then shop for produce, locally made artworks and garments.
